- Enrico Bartolini, Chef of Ristorante Enrico Bartolini in Milan

- Eros Buratti, cheese-refiner and owner of La Casera in Verbania-Trobaso

- Andrea Campani, Chef of Osteria del Borro in San Giustino Valdarno (Florence)

- Lionello Cera, Chef of Antica Osteria da Cera in Lughetto di Campagna Lupia (Venice)

- Aniello Falanga, Pizzaiolo of Haccademia in Terzigno (Naples)
